Ingredients

  • 200 g (7 oz)white chocolate (finely chopped)
  • 60 ml (1/4 cup)heavy cream
  • 2 tbspunsalted butter (softened)
  • 2 tbspfresh lemon juice
  • 1 tbsplemon zest (finely grated)
  • 1/2 tsppure vanilla extract
  • 1/2 cuppowdered sugar or fine graham cracker crumbs (for coating)

Method

  1. Prepare the Ganache:
    • In a heat-resistant bowl, combine the white chocolate, heavy cream, and butter.
    • Melt the mixture using a double boiler or microwave in 20-second intervals, stirring after each interval, until smooth and fully blended.
  2. Enhance the Flavor:
    • Add the lemon juice, lemon zest, and vanilla extract.
    • Mix thoroughly until the ganache is silky and consistent.
  3. Chill the Mixture:
    • Cover the bowl with plastic wrap and refrigerate for 2–3 hours, or until the mixture is firm enough to handle.
  4. Shape the Truffles:
    • Use a small spoon or melon baller to scoop portions of the chilled ganache.
    • Roll the portions gently between your palms to form small, round truffles.
  5. Add the Coating:
    • Roll each truffle in powdered sugar or crushed graham crackers until evenly coated.
  6. Set and Serve:
    • Place the coated truffles on a tray lined with parchment paper.
    • Refrigerate for an additional 30 minutes to allow them to firm up.
    • Serve chilled for a refreshing treat or at room temperature for a soft, melt-in-your-mouth experience.
  7. Storage Tips:
