Ingredients
For the Crust:
- 1 cup (100 g) crushed graham crackers
- 3 tbsp melted butter
- 2 tbsp granulated sugar
For the Cheesecake Filling:
- 16 oz (450 g) cream cheese, softened
- 1/2 cup (100 g) granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 2 tbsp heavy cream
- 1 tbsp all-purpose flour (optional, for stability)
For the Topping:
- 1/4 cup (50 g) powdered sugar
Method
- Prepare the Base:
- Heat the oven to 320°F (160°C) and line a muffin tray with paper cups.
- Combine crushed crackers, melted butter, and sugar in a bowl, mixing until fully blended.
- Firmly press this mixture into the bottom of each liner to form the crust.
- Bake the crusts for about 5 minutes, then allow them to cool completely.
- Create the Cheesecake Filling:
- Beat the cream cheese in a large bowl until smooth and lump-free.
- Add the sugar and continue beating until fully incorporated.
- Mix in the eggs one by one, ensuring each is well blended before adding the next.
- Stir in the vanilla extract, heavy cream, and flour (if using), mixing until the batter is smooth and creamy.
- Pour the filling evenly over the prepared crusts, filling each liner close to the top.
- Bake for 15–20 minutes, or until the centers are slightly wobbly when gently shaken.
- Let the cheesecakes cool to room temperature, then refrigerate for at least 2 hours or overnight for best results.
- Caramelize the Top Layer:
- Right before serving, sprinkle an even, thin layer of powdered sugar over each cheesecake.
- Use a torch to caramelize the sugar until it turns golden and creates a crisp, glassy layer.
- Let the caramelized sugar harden for a few minutes before serving.
