Ingredients

For the Crust:

  • 1 cup (100 g) crushed graham crackers
  • 3 tbsp melted butter
  • 2 tbsp granulated sugar

For the Cheesecake Filling:

  • 16 oz (450 g) cream cheese, softened
  • 1/2 cup (100 g) granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 2 tbsp heavy cream
  • 1 tbsp all-purpose flour (optional, for stability)

For the Topping:

  • 1/4 cup (50 g) powdered sugar

Method

  1. Prepare the Base:
    • Heat the oven to 320°F (160°C) and line a muffin tray with paper cups.
    • Combine crushed crackers, melted butter, and sugar in a bowl, mixing until fully blended.
    • Firmly press this mixture into the bottom of each liner to form the crust.
    • Bake the crusts for about 5 minutes, then allow them to cool completely.
  2. Create the Cheesecake Filling:
    • Beat the cream cheese in a large bowl until smooth and lump-free.
    • Add the sugar and continue beating until fully incorporated.
    • Mix in the eggs one by one, ensuring each is well blended before adding the next.
    • Stir in the vanilla extract, heavy cream, and flour (if using), mixing until the batter is smooth and creamy.
    • Pour the filling evenly over the prepared crusts, filling each liner close to the top.
    • Bake for 15–20 minutes, or until the centers are slightly wobbly when gently shaken.
    • Let the cheesecakes cool to room temperature, then refrigerate for at least 2 hours or overnight for best results.
  3. Caramelize the Top Layer:
    • Right before serving, sprinkle an even, thin layer of powdered sugar over each cheesecake.
    • Use a torch to caramelize the sugar until it turns golden and creates a crisp, glassy layer.
    • Let the caramelized sugar harden for a few minutes before serving.
