  • 2.2 lbs (1 kg) green or white asparagus
  • 7 tbsp (100 g) unsalted butter
  • 3.5 oz (100 g) grated Parmesan cheese
  • 1 tbsp all-purpose flour
  • 1 tbsp salt
  • 1 pinch black pepper

Method

  1. Prepare the Asparagus:
    • Wash the asparagus thoroughly. If the stalks are thick, peel them for a more tender texture.
    • Tie them into a bundle to keep them aligned while cooking.
  2. Cook the Asparagus:
    • Fill a large pot with water, add salt, and bring it to a rolling boil.
    • Carefully submerge the asparagus and let it cook for 25 minutes (or 8 minutes in a pressure cooker).
    • Once tender, drain well.
  3. Prepare the Butter Sauce:
    • Place a saucepan over low heat and melt the butter gently.
    • Sprinkle in the flour and stir continuously until it develops a light caramel color.
  4. Assemble and Serve:
