Ingredients

  • 10.5 oz (300 g) potatoes
  • 3 large eggs
  • 3.5 oz (100 g) dark chocolate (70% cocoa)
  • 1/2 cup (1 stick) unsalted butter (softened, divided use)
  • 1/2 cup (100 g) granulated sugar
  • 1 tsp vanilla sugar (or 1 tsp vanilla extract)
  • 1/3 cup (50 g) potato starch
  • A pinch of salt

Method

  • Prepare the potatoes:
    Wash the potatoes thoroughly, then boil them in salted water or steam them for 20–25 minutes until tender. Peel and mash them into a smooth purée, then set aside to cool slightly.
  • Melt the chocolate:
    Break the dark chocolate into small pieces and melt it with 7 tablespoons (100 g) of butter over a double boiler, stirring until smooth and glossy.
  • Combine the base ingredients:
    In a large mixing bowl, combine the mashed potatoes with the melted chocolate mixture. Stir in the sugar, vanilla sugar (or vanilla extract), potato starch, and egg yolks until smooth and well-blended.
  • Whip the egg whites:
    In a separate bowl, beat the egg whites with a pinch of salt until they form stiff peaks. Gently fold the whipped egg whites into the potato-chocolate mixture, taking care not to deflate the batter.
  • Bake the cake:
    Grease a loaf pan or cake tin with butter and pour in the batter. Smooth the top with a spatula. Bake in a preheated oven at 350°F (180°C) for 30–40 minutes, or until a toothpick inserted in the center comes out clean.
  • Cool and serve:
    Allow the cake to cool slightly in the pan before turning it out onto a wire rack. Let it cool completely before serving. This cake is best enjoyed chilled.
