Creamy Potato Soup
Ingredients
- 4 medium onions (about 2 cups, finely chopped)
- 2 tablespoons (1 oz) unsalted butter
- 2.2 lbs (1 kg) potatoes (about 6 medium potatoes)
- 6 cups (1.5 liters) water
- 1 egg yolk
- Salt and freshly ground black pepper, to taste
Method
- Cook the Onions:
Peel the onions and chop them finely. Heat the butter in a large pot over medium heat until melted. Add the onions and sauté gently, stirring occasionally, until they are tender and translucent. Take care not to let them brown. - Prepare and Add the Potatoes:
Peel the potatoes, rinse them thoroughly, and slice them into thin rounds. Combine the potatoes with the sautéed onions in the pot, stirring well to coat. Stir well and let them cook together for about 5 minutes to absorb the flavors. - Simmer the Soup:
Pour in 6 cups of water, ensuring the potatoes are fully covered. Increase the heat until the mixture starts to boil, then lower the heat to a gentle simmer. Cover the pot with a lid and let it cook for 1 hour, or until the potatoes are completely soft. - Blend Until Smooth:
Remove the pot from heat. Use an immersion blender to puree the soup until silky and smooth. Alternatively, transfer the soup in batches to a regular blender and blend carefully. - Enrich and Season:
Whisk the egg yolk in a small bowl. Slowly add a ladleful of the warm soup to the yolk, stirring constantly to temper it. Return the mixture to the pot, stirring thoroughly to incorporate. Add salt and ground black pepper to taste. - Serve:
Ladle the soup into serving bowls immediately while it’s hot. Optionally, garnish with chopped parsley or a drizzle of cream for extra richness
