A gourmet twist on the classic mimosa avocado! This recipe combines creamy avocado, smoked salmon, and seasoned egg yolks, creating a delicious and elegant appetizer.

 

Ingredients

  • 4 large avocados
  • 2 large eggs
  • 4 oz (115 g) smoked salmon, finely chopped
  • 4 tbsp olive oil
  • 1 tbsp chopped chives
  • Salt to taste
  • Black pepper to taste
  • Paprika for garnish

Method

  • Hard-boil the eggs: Place eggs in boiling water and cook for 10 minutes. Once done, transfer them to cold water, then peel them.
  • Prepare the smoked salmon: Cut each slice into four small pieces.
  • Prepare the avocados: Cut them in half, remove the pits, and carefully scoop out the flesh with a spoon. Dice the avocado flesh into small cubes.
  • Assemble the dish: Gently mix the diced avocado with the smoked salmon pieces, then spoon the mixture back into the empty avocado shells.
  • Make the mimosa topping: Separate the egg yolks from the whites. Mash the yolks with a fork and mix them with chopped chives. Sprinkle the mixture over the avocados.
  • Season to taste: Drizzle with olive oil, then add salt, black pepper, and a light dusting of paprika for garnish.
