Ingredients

  • 4 medium potatoes (~1.3 lbs)
  • 1 medium onion
  • 3.5 oz (100 g) smoked bacon (or mountain ham as an alternative)
  • 8 large eggs
  • 1/4 cup (2.5 fl oz) milk
  • 1 tbsp fresh parsley, finely chopped
  • 1 tbsp fresh chives, finely chopped
  • 2 tbsp (1 oz) unsalted butter
  • 3.5 oz (100 g) Gruyère cheese, diced
  • Salt and white pepper to taste

Method

  • Cook the Potatoes:
    Peel and wash the potatoes. Boil them in salted water or steam them until tender, about 20–25 minutes. Let cool slightly, then cut into small cubes.
  • Prepare the Onion and Bacon:
    Peel the onion and slice it thinly. Cut the smoked bacon into small cubes.
  • Whisk the Eggs:
    In a large bowl, beat the eggs with the milk, parsley, and chives. Season with salt and white pepper.
  • Sauté the Onion and Bacon:
    In a large non-stick skillet, cook the onion and bacon over medium heat until the onion softens and the bacon begins to crisp, about 5 minutes.
  • Add the Potatoes:
    Stir the diced potatoes into the skillet with the onion and bacon. Let them cook until they start to brown slightly.
  • Combine the Ingredients:
    Add the butter in small pieces to the skillet, letting it melt evenly. Pour the egg mixture over the potatoes, spreading it evenly. Scatter the diced Gruyère cheese across the surface.
  • Cook the Omelette:
    Let the omelette cook gently over low to medium heat until the eggs are mostly set but still slightly soft and creamy on top. This should take about 5–7 minutes.
  • Fold and Serve:
    Gently fold one-third of the omelette over itself and slide it onto a warm serving plate. Serve immediately while hot.
