A classic Provencal tomato sauce made with ripe tomatoes, wine, and Mediterranean herbs. Perfect for gratins, pasta, and more!

Ingredients

  • 1 lb (500g) ripe tomatoes, quartered, seeds removed
  • 1 small onion, finely chopped
  • 2 garlic cloves, peeled and whole
  • ½ cup olive oil
  • 1 tbsp all-purpose flour
  • 1 sprig fresh thyme
  • 1 tsp dried basil (or fresh, chopped)
  • 1 cup dry white wine
  • Salt and black pepper, to taste

Method

  1. In a large skillet or saucepan, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent.
  2. Sprinkle in the flour and stir well to combine.
  3. Pour in the white wine, season with salt and pepper, then add the quartered tomatoes, thyme, and basil.
  4. Place the whole garlic cloves into the sauce and let it simmer over low heat for 30 minutes, stirring occasionally.
  5. Once cooked, blend or strain the sauce for a smooth texture.

  • For a creamier sauce, whisk in two raw egg yolks at the end of cooking.
  • This sauce pairs beautifully with gratin dishes, pasta, or roasted vegetables.
